Leftovers for days

As a food holiday, Christmas is most likely to leave some of us with plenty of leftovers and food scraps in the fridge. This is a thing to be celebrated since most holiday foods last a long time and can be transformed to new dishes with only a few things added.

Do you have some leftover porridge after trying our Christmas Porridge recipe, or maybe you are just looking for the perfect, easy holiday dessert? Let us introduce the Ris á la Malta, a delicious porridge-based dessert that is commonly eaten around Christmas time in Sweden and Denmark.

Ris á la Malta


4 dl Rice porridge
2 tablespoons Icing sugar
1 teaspoon Vanilla sugar
2 dl Whipping cream
2 Oranges

How to make it

1. Mix the Rice porridge, Icing sugar and Vanilla sugar.

2. Whip the Cream and stir into the porridge until nicely mixed. Taste and add more sugar if needed.

3. Peel and cut the oranges into small pieces and add to the porridge. Save some nice pieces to garnish with, you can fillet them if you want a more luxurious version.


You can replace the Oranges with other fruits and berries based on taste and what you have at home. Why not Raspberries for a more child friendly Ris á la Malta, or Lingonberries for a Nordic feel.
